The Natural Edit

I often recommend chia seed puddings to my clients as an easy breakfast option. It takes less than 2 minutes to prep the evening before and then it can be grabbed to go in the morning. There are plenty of variations you can play around with but this is one of my all-time favourites. Reminiscent of tropical holidays and days spent in the sun...

Why is it good for me?

  • Chia seeds are an excellent vegan source of omega-3 fatty acids. Omega-3 is great for keeping skin feeling hydrated and smooth in addition to being anti-inflammatory so helpful in inflammatory skin conditions such as acne and eczema.
  • Mango is a good source of digestive enzymes. A well functioning digestive system is vital to optimal skin health. They're also a great source of vitamin C which is essential for collagen synthesis and silica which is a component of connective tissue. Basically, if you want firm and plump skin, you need these in your life!

Ingredients (makes 2-4 servings)

400ml can of full-fat coconut milk

1 mango

4tbsp chia seeds

1/2 tsp vanilla powder (optional)

Mix the chia seeds with the coconut milk and vanilla powder, cover and leave overnight (or at least for a few hours) in the fridge. Stir well and adjust accordingly - if too wet add more chia seeds, if too dry add a splash of water. Top with the chopped mango. Tastes best when chilled. Enjoy!
