AÇAÍ BOWL RECIPE

Anyone who knows me knows how much I love an açaí bowl! The açaí berry is native to Brazil but I first got in to it when I lived in Sydney many years ago. Açaí is high in antioxidants which protect the skin from free radicals and prevent premature ageing. It also has anti-inflammatory effects and contains calcium, vitamin A, phosphorus, iron and thiamine. Basically, it's one of my top skin superfoods! I alternate toppings but always have mine with peanut butter...

Ingredients

1 frozen unsweetened açaí pack (find these in the freezer at most health food stores)

1 ripe banana

Splash of unsweetened almond milk

Topping choices - 1tbsp goji berries, 1 tsp bee pollen, serving of refined-sugar-free granola, 1/2 sliced banana, handful of fresh berries, 1tbsp nut butter, 1 tbsp flaked coconut

Method

Blend the frozen açaí, banana and almond milk in a high-speed blender until smooth. You may have to pulse the blender. The consistency should be quite thick. Serve immediately topped with any toppings you like!
